The main wing can range from 15 to to 5 degrees at speed. I usually run 20 to 30 degrees of flap .Less if its blowing hard. We have found a chain and sprocket with positive control to work best. Using a main sheet is suicide because of flutter. The main wing controls have hardly any load on them. The control wheel is easy to manage. The flap control can get loaded up sometimes but nothing severe.(  I . have a video that shows how they work. It's about half way through the video.

).  The wing is a fun way to sail. Its very relaxing compared to pulling on a sail with a main sheet. The loads are much lighter on the boat compared to a boat with a sail since there is no sheet load compression.
  I don't have any of the soft ware that you mentioned but some other guys on here do. All of the foil section coordinates are listed in the files section. I usually just use a printer and reduce the foil shape as needed when making tapered rib sections.

If you are not already aware, there are some great programs available
for wing design such as TraCFoil and Compufoil3D. You enter all of the
parameters such as airfoil type, spars, chord, etc, etc and it will
plot a set of full size ribs for you. It is very easy to make tapered
wings with these programs.
