So when you are powered up and cruising what is the average angle of
attack of the main wing? And what is a normal flap setting? How much
force does it take to rotate the wing while sailing?

If you are not already aware, there are some great programs available
for wing design such as TraCFoil and Compufoil3D. You enter all of the
parameters such as airfoil type, spars, chord, etc, etc and it will
plot a set of full size ribs for you. It is very easy to make tapered
wings with these programs.
