The "low carb thing" is eminently doable on a vegetarian diet, although I've not
attempted a vegan version. I've been dieting 10 weeks on a CKD. Ketosis for 6
days and carb up on the 7th day. Lost mucho BF.

I can't really do the low-carb thing.. I eat the sandwiches yves or litelife
too.. but I have to have some soy yoghurt or pretzels or something with them.
If I don't have carbs (at least 50%) I feel like I am starving to death and I am
no picnic to be around either. The tofurkey jerky doesn't have many carbs maybe
1 or 2 per serving for the low-carbers and lots of protein and no fat.

every night make like two or three high-protein
lo-carb sandwiches, tofurky works but it's pretty high
in carbs. i use the yves slices, lightlife ones are
good too. keep them close by, and i find it's pretty
easy to get those five or six meals a day.
