Here is a typical list for me with weights. This gearlist is good for me (comfortable) down to about freezing. I've used it on the John Waine Pioneer Trail. I've done some ultralight backpacking and find that the gear can be pretty much the same for backpacking and cycling, except that with cycling you will need a few tools and bike maintenance/spares etc. The below list is about 15 lbs including the weight of the panniers.
 
Sleeping:
 
Six Moon Designs Europa tent (2 man) 37 oz
BMW (Nunatak) Arc-X down quilt 16 oz
BMW torso lite inflatable pad + Gossamer gear Nitelite torso pad 14 oz (60 inch total length for the combination)
Thermarest small pillow (modified) 5 oz
 
Total 4.5 lbs
 
If I'm going solo, I'll use a single person 23 oz tent (drops the weight about a pound)
 
Cooking
 
Snow Peak gigapower cannister stove 2.5 oz
Cannister (110 size), full 7 oz
Snow Peak 600 mug with foil lid 2.9 oz
Snow Peak titanium spork 0.6 oz
Snow Peak 150 double wall mug 1.6 oz
 
Total 14.6 oz (o.9 lbs)
 
I'll sometimes sustitute a small Esbit stove and use a smaller Snowpeak 450 mug/cup.
Total weight for that setup is about 6 oz
 
Clothing typically not worn while riding, but used for sleeping or lounging around, ie "camp clothing"
 
Montbell thermawrap jacket 9.5 oz
Patagonia silkweight longjohns 7 oz
Smartwool lightweigh merino wool top 8 oz
Mt Hardware beanie 0.8 oz
Possum down socks 1.5 oz
Rainshield O2 hooded rain jacket 5 oz
Golite reed pants (waterproof breatheable rain pants) 4 oz
 
Total 2.2 lbs
 
Misc items:
 
Small ditty bag with miscellaneous toiletries/medicines, first aid kit, etc 16 oz
lighting (2 photon microlights, one red one white, with clip) 1.0 oz
For late winter/early spring or fall with shorter days I'll add a Petzel Zipka headlight 1.7 oz
Canon S230 digital camera 7 oz
Sangean radio with pillow speaker 7 oz
Cell phone 3 oz
Swiss army classic pocket knife <1.0 oz
 
Total 2.2 lbs
 
Tools
I carry a basic toolkit with allen wrenches, spoke wrench, tire levers, patch kit, chain breaker, small adjustable wrench, plus a couple of tubes, etc. I'm not sure of the exact weight but it's about 1.0 lb.
 
That's about 11 lbs total, not including the clothing I'm wearing plus a few miscellaneus items, and of course any water or food carried.
 
With a tent on top of a rack, everything else easily fits in a pair of Ortlieb sportpacker plus panniers (front panniers). The panniers weigh 3.6 lbs so the total weight of the above setup *including* panniers is under 15 lbs.
