One can easily save a 100g+ per tire if you research a little so 200g+ saving by swaping out tires and it won't cost you that much compared to other parts like XTR cranks. Wheelset is next like others have pointed out. I assume you already have a digital scale, if not its the first thing you should purchase and weight most of your existing components to see where your baseline is and start from there.
I have a older Mavic CrossLand V-brake only wheelset that weight around 1,750g and feel's nice but one thing with Mavic hubs is their noise, its one of the loudest free hub you'll ever hear and that racheting sound with every rotating might drive you crazy if your not into rock'n roll wheels. On rides with friends I have to tell them my hubs are not broken, its just that way and I thought I have a bad hub until my bike shop show me the CrossMax SL which is even louder!

you into bling bling factor, Mavic wheels not only let you show off your $800 purchase but also let everyone hear your coming 1/4 miles away ;-)

Is there anything else that I can do (at minimum cost) to drop some
more weight? I understand the wheelset was supposed to be fairly light
so I havent even thought about switching that out. Thanks for the help.
