Hey Richard,
I found your email address here. Guess it's easier to send it to you via
email rather than sms ;)
Here we go :
Ingredients : ( serve of 4 )
medium size tomatoes ( pick the ripe one but make sure it's firm) - 4
Pineapple (canned or fresh) diced into small little cube
Shelled walnuts - Chopped (not too fine if you want it to have a little
crunchy taste)
4 tablespoon of extra virgin olive oil ( pre soak with basil will gives you
that extra basil small)
Salt
Honey (1 teaspoon)
Rasin (depend on your preference)
Wash the tomatoes, cut them crossways and scoop out their seeds and fresh.
Sprinkle with salt and them then out on a dish to let them drip dry ( about
20 mins will do)
Mix the pineapple with walnuts, a little salt, olive oil, honey, rasin and
stir well.
Fill the tomatoes with the fruit mixture and chill it for at least 30mins
before serve and you are Done! ;-)
It's as easy as you see.
Let me know the taste if you decided to try okie? ;)
btw, this can be serve as a side dish with grilled fish or meat as well....
Iris
