Hi Soccer_playin_geezer -

The difference between the PC 'easy' and 'full featured' mode is
somewhat the same as the C&D basic game vs using all Advanced and
Super Advanced Rules. For example, in 'easy' mode you call a play
(for example, 'end run' or 'flat pass'), but not to a particular
direction or location. See this Strat write-up on Easy Mode:

Also, if you like you can read the entire PC game instructions in advance:

In fact, I recommend downloading the instructions into a file so that
you can search them as you need to look things up.

There are lots of knobs (configuration settings) available in the PC
game, more, I think, than with the C&D game.

If you like the C&D game, I think you going to love the PC game!

I played SOM in the late 70s to the mid 80s. I got the bug to start playing again. I just ordered the computer game so that I can get acclimated to the game...
