That seems easy--McArdle, Katch, and Katch, Exercise Physiology, 6th edition,
Chapters 12-17, about 100 pages. Then add chpts about training and CV health,
and what a course! I couldn't resist the shameless plug. Many courses that use
the text are at MS level, including medical schools, and the feedback we have
received is that professors and students appreciate the graphics and other
integrative features (many on-line ancillaries). The publisher may be able to
put together a collection of chapters to meet your needs. You should contact
