David,
You can look up quite a lot of professional rider here:
http://www.trap-friis.dk/indexev.html
Unfortunately, all the names in the database are riders that have
been active in recent years.
So I couldn't confirm Merckx, Hinault, Bugno, Rominger, Roche,
Hampsten, Fignon, Kelly, LeMond, Mottet, Rooks and Nijdam :(
I am sure that Micky will know about Bugno's palmares though ;-)
As for the rest, you're right about Zabriskie, Hamilton, Cipo and
Petacchi. McEwen has yet to win a stage in the Vuelta (he has come
2nd in a couple of stages).
Being a dane, I know that the only danish rider to win a stage in
all 3 GT's is Jesper Skibby. Neither Bo Hamburger, Bjarne Riis or
Rolf Sørensen pulled it off.

have won stages in all three grand tours? I tried a couple of
different google searches and couldn't come up with anything.

Zabriskie has now done it. So has Tyler Hamilton.
