Use snow to weight down the trailing edge of the kite to set it up
for launching.

For landing I usually dig my ski or snowboard into the snow as an
anchor and attach the safety leash to it, then go to the kite, turn
it sideways to the wind and weight down one wingtip while I wind up
the lines.

If you are frequently skiing on bare ice (light winds only with a
kite that big) then you might want to get an ice screw to use as an
anchor for the kite during set-up and landing. You can get an ice
screw from a store that sells climbing equipment.
