Hello and Happy 2004! I hope your year is off to a great start. Our big news is our new website - if you haven't seen it yet, check it out at www.cinghiale.com

We also switched servers - so if you had a little trouble reaching us or getting a reply, we apologize for the difficulties. Everything seems to be in order again and we'd love to hear from you.
 
Some of you have already signed up for one of our five trips this year - good for you! If you are contemplating one but haven't contacted us yet, please do as spaces are filling. NEW this year are two glorious California trips, one in the Sacramento area in April, a Ritiro or training camp with Dr. Max Testa, and the last trip in the fall, our Sonoma Coast tour. So if you can't make it to Tuscany this year, we will try to bring it to you - with some help from the natural beauty of the Golden State.
 
Other trips include the classic favorite, Cooking & Cycling in Castagneto and Elba, this year in early summer. This one is especially accomodating for couples with mixed interests. For the connoisseurs, we've combined the former SuperTuscan with the ever-popular Crete trip, now called the Wine-Lover's Crete Tour, in the fall. And last but not least, we introduce our first-ever four-pig trip, the burly Monte Amiata, with a jaunt up a volcano for those feeling feisty (options available for those not so inclined. That pun just slipped out, honest).

Sept 11 to 19: Wine-Lover's Crete Tour (3 pigs)

'I asked our Cinghiale chef Paolo for an idea on how to prepare butternut squash. Here is the original and very delicious recipe:

"Zucca!!! Uhm, soup, great idea, toss in a pot with some olive oil, some chopped blond onions with coriander, not too much, peel the zucca and add the zucca to the roasted onions cook them till the zucca becames a bit brown, add some veg. stock, cook for about 30 min. Make a puree. Served with river shrimps sauted with garlic and tyme, some bread croutons. Buon appetito."
 
I skipped the river shrimps and made nice thick croutons with Fonte di Foiano oil and herbs. YUM!'
