We'd be happy to have you join us.
I'm sure day of registration is fine, no worries. You will have to choose your class, but I recommend Cs as a starting point. And yes, mtbs will be fine, you just have to remove bar-ends, if you have them.
You can generally ride courses in advance as long as it's public land that is open to this kind of thing all the time. However, if not, it's best to check. I don't know the answer for this particular venue. Hopefully someone else will chime in.
As for practice, find a park with a lot of grass and practice, practice, practice. If you check out the OVCX series, (check google, ohio valley cross, I think) you'll see there's a race in Heath, Ohio, the previous weekend, which isn't too far at all. It may make sense to go watch and get a feel for what's going on.
Nothing else you'll need to bring. You won't need a camel back, or really even a bottle for the race. Drink plenty before hand and you should be fine. Just the regular race stuff, just know it's a hard effort, so don't over dress.

Subject: [columbuscross] Olentangy Caverns...couple newbie questions
My friend and I are planning on participating in this event, and
possibly others.
We just have a few questions.
1. Do we need to register in advance, or can we register the day of?
2. Do we choose our class (A,B,C) at first?
3. Is it okay to ride our mountain bikes at first instead of bona-
fide cross bikes?
4. Are we able to go out to the site and ride the course in advance
to get a feel for it and practice a little?
5. Any other newbie things we need to know, like stuff we have to
bring, etc that people often overlook thier first time?
Thanks!
