I've just moved to Fort Collins from Chicago, and have found a good level of Sand Play at the Oasis, in Broomfield (>?).  I looked for a few weeks for places to play, and finally drove down about two weeks ago. The facility is still relatively new, and they are working on building their league basis.  I've been playing on Thursday and Sunday nights after 6:00 pm, and there have been plenty of "drop-in" courts and slots.  I understand Tuesday night is a good night, but busier and harder to get courts.
 
From what I understand, the facility was designed to be an alternative/competitor to The Island, which is harder to get into.  The Oasis has four indoor "sand" courts, and three indoor "hard" courts.  Very clean, and the owners are usually on-site and very friendly.  Seems to be a great place to support.  The drop-in cost is $5, or you can buy punchcards for 10 visits for $40.
 
The facility is very nice (deeper sand for Colorado from what I've been told by the locals).
 
Anyhow, just a few thoughts.

BTW Wash Park has grass pick up games only.  (I wish they'd build some
sand courts!  Might as well 'cause of the drought!)  Bring your own
equipment or at least a ball & you'll find plenty of people to play
with.

If you join the Wash Park Volleyball Group list temporarily, you might
be able to get more info about other indoor pick-up nights that people
organize occasionally in various local gyms.

I hear that Garland Park is popular for sand pick-up for upper division
men's doubles.

If you don't mind the drive, also check http://sportsoasis.com/ weekly
for when they have their drop-in nights on hard court & sand.
