If it were to happen again.. but in the street, .. I would probably pick up a rock, or something, and slam the guy with it. In a nice way though,
so he isn't too deformed.
When I did demonstration for the police, they asked me wha tto do in a knife fight. I said, if you can, take off your jacket or shirt and wrap it in your hand as fast as you could if you can tell the situation would turn bad. Then, when the guy swings at you, go in with the wrapped hand.
No patty cake and dancing during fights. Get in , get out and go home.
Take anything you have, and throw it at the guy, a shoue, or something. Just to get his eyes off you for a moment, and then take him out. It is simple like that. You must think fast, and practical. All the bong sau and tan sau wouldn't help if the guy is skilled in knife fighting. Proper foot work will get you out of the way of the knife and good hand skills will allow you to break the person attakcing you.
I trust my Wing Chun and because it is a common sense cultivation, if the man has a weapon that can possibly reach my body fast than I could reach his, I must find a way to get to him before he gets to me.
The best thing to try in the beginning, is to talk it out.. not fight. Wing Chun is a very direct cultivation, and we must have compassion for others, even though they may be crazy at the moment, and ready to hurt you. Wing Chun is just too ... aiya.. you get the point.
I didn't begin Wing Chun to kill people, but to cultivate the mind. Fighting comes as a result of proper practice. It is inevitable one will learn how to use Wing Chun, but it is harder to cultivate mind, eradicate ego, and be selfless when it comes to helping others, especially when they are trying to kill you.

Bitter shocking truth, and reality about attackers with weapons.
Knife attackers are usually desparate, or drugged,and will do
anything to get what they want.
The fact of the matter is that most educated people or people whom
have had any education would not be in the situation to pull out a
knife for financial gain or to rape a defenseless woman in an alley.
These are people whom lack education and are very bitter and agitated
mentally and phyisically.
Most of us here within the group having had martial arts training if
put in the position to deal with an attacker with knife, and if
pushed to a point of fight or flight have a very heavy decision to
make.
Now lets talk about the type of open hand to weapons training there
is out there for dealing with knife attackers:
Deflecting the knife hand at the wrist, or elbow and chin na (joint
manipulation or lock) the wrist to disarm.
Deflecting the knife hand and stepping into the attackers box-with or
without a knee to the groin-holding the knife arm in Barr and
dropping as to brake the arm, to disarm.
There is also the Akido method of disarmament, deflecting the knife
hand into a chin na(joint manipulation or lock)at the wrist and throw
of the opponent.
Personally the first two would be the only ones I'd even try to
utilize if in the situation discussed here, due to the fact that the
opponent is not going to be a stand still sparring partener like in
class. And if I had to step into the attackers box the chin na would
definately go to a full brake of limb, and any strike would be a
brutal one to mame.
There are a few techniques out there and if put in the situation God,
Allah, Whomever, or Whatever forbid, we would try to hold off the
attack and utilize what we know to save family, life and limb from
the attacker.
But if this was to come to pass. As stated in the original post it
would be a kill
or be killed situation. Would you be willing to give that Dim Mak to
quell the attack?
In Wing Chun we are from Buddhist School in nature so if someone
punch at us we move second but hit first.
We pin or jam limbs so that they are rendered useless to the
attacker.
We use straight inline punch and defense as to be more effective,
more direct.
To be so effective so that we may be merciful if we so choose.
