I highly recommend the Mighty Hamptons olympic distance in Sag Harbor.  It's a beautiful setting, well organized, and benefits the Southhampton Hospital   The swim is in the bay, parallel to the shore with a water start. The bike is quite flat though they do find more hills than I knew were out there.  The run is very flat with good shade for much of the route.  See http://swimpower.com/2000/races.cfm
