In my opinion, a good choice is to Draw your designs in Corel Draw, Save them in an Autocad extention, then have the knives laser cutted, thats what I do here, and I believe Roy also does it in England. You will have to finish the knives with an angle grinder, or with a belt sander, but the laser cut will help you to have all knives cutted the same size, with a precision few people could do at home...the finishing is Much easyer than the cutting...
