Contracting or posing muscles increases control over the muscle. Contracting in
between
sets can be used as a technique to further pump and fatigue the area being
worked.
Contracting and relaxing a muscle increases blood flow to an area which leads to
waste
product removal, these waste products to my understanding cause muscle soreness.
