I'm of the opposite view and consider the headrest essential on my GTR.
This is especially true of longer rides. Otherwise I get sore neck
muscles holding my head up. And it's certainly not just for downhills
and stops.
I'd also suggest mirrors on both sides. You will be able to keep track
of what's behind you much better with two mirrors.
You'll need a mount for the GPS, I like the RAM mounts.

Fenders are good to have, not just for rain, but to keep small rocks
from being thrown at you.
I use mini lawnsails on a 3' mast on mine. Not completely essential,
but it won't hurt. If you get these make sure and attach a tie down to
the sail.

My GTR is rigged with a lot of other stuff depending on what I'm doing,
the latest is mounting a Camelback unbottle under the seat. I also have
a Fastback 3.0 under the seat for my "toolbox" and two additional bottle
holders. I'm rigged for long unsupported rides, the latest being BRAG 2008.
