The Dundas Valley Conservation area has many great trails for x-country skiing.  The only thing lacking in recent years is snow.  (I miss the 70's and 80's when you could ski there most days from December to March )  For the novice there is also a rail trail that passes though it.  there will be a few hikers there but it is usually not too many in the winter.
