I know exactly how you feel. My knight's wife had a walker that spent a couple of years not being ridden in a pasture full of quarter horses. She lost her gait. How did I get it back? I rode her. Ride her a lot. Ride her until she is _tired_, without injuring her, of course. The more tired she gets, the more she'll be inclined to perform the gait that is easiest on her. She'll eventually figure out that the walking gait isn't as tiring for her body structure as trotting.
Here are a couple of websites that may help out:

This is kind of a different question. Does anyone out there have experience training Walking horses? We have a purebred filly that we are starting, and she shows no inclination to gait. If you ask her to speed up from her regular walk, she happily trots out. I have never had one NOT gait, and I have no idea how to fix it. I think she is just not engaging her hind end, but when I ask her to, the simply trots out faster...I am stumped. Thanks in advance!
