I would highly recommend the Cuisinart Resort or Cap Jaluca in Anguilla. These are 2 of the most beautiful resorts and beaches in the world. S - NE wind will work for kiting. Your girlfriend will be EXTRA appreciative when she sees the place
The quoted rates are high but I'll bet if you call you can negotiate a WAY better rate since travel there is way off
